VINIFICATION PROCESS
THE GRAPES UNDERGO A SOFT PRESSING. THE MUST START A FERMENTATION FOR ABOUT 10 TO 20 DAYS, DEPENDING ON THE YEAR. AFTERWARDS THE DECANTATION PHASE AND A SECOND FERMENTATION AT A CONTROLLED TEMPERATURE WITH THE ADDITION OF SELECTED YEASTS. THE WINE STAYS IN THE AUTOCLAVE UNTIL THE OPTIMAL PARAMETERS ARE REACHED IN TERMS OF ALCOHOL, SUGAR AND PRESSURE, AFTERWARDS BOTTLING FOLLOWS.
